Week 5: Sea salt + Peanut Butter cups

Chuc mung nam moi, friends! This week, my sister-in-law showed me an amazing peanut butter cup recipe sent by her naturopath. Anytime a doctor prescribes a 'healthy' chocolate recipe, you make it! The chocolate shell for this wonderful little treat was a perfect fudge-like consistency, while the Celtic sea salt (doctor recommended since 1976 -- I haven't felt less guilty eating chocolate since elementary school!) added a whole nother dimension of taste bud stimulation that you have to experience to believe.

Recipe (makes 25 bite-sized cups)
Ingredients
     2 cups semi-sweet chocolate chips
     1 tbsp organic coconut oil
     1/3 cup almond (or rice) milk
     3/4 cup peanut butter (for best results, go for the organic stuff!)
     Sea Salt
Directions
Mix the chocolate, coconut oil, and almond milk in a small pot placed over a larger pot of gently boiling water until the chocolate has melted and the ingredients have been uniformly incorporated.
Scoop a small dollop of chocolate into about 25 small muffin liners and let the chocolate stand for about 5 minutes. Next, place 1tsp (or more!) of peanut butter in the centre of each cup, and top with a generous amount of sea salt
Cover the peanut butter with an even layer of chocolate and top with a light sprinkle of sea salt.
Refrigerate until the chocolate has hardened, and enjoy!
