Week 1: No-bake Berry Bars

These delicious berry bars (modified from therawtarian’s Raw Raspberry Bars recipe) were incredibly easy to make. They only required about 20 minutes in prep time and 6 ingredients (no sugar!). I was quite skeptical when my sister-in-law, who's on a raw food cleanse, sent me this recipe because its simplicity seemed too good to be true... but the shortbread crust was a delight! I'm looking forward to trying a few more raw food recipes throughout the year as I was very impressed by how these bars turned out. Looks like the bar has been set rather high for the rest of the year.
Blunder of the week: This crucial step wasn't included in the recipe (likely because it should be common sense for everyone except me!), but always pit your dates before popping them in a blender. I'm sure I could've prepared the bars in 10 minutes if not for the search party I called for the six missing date pits. It's going to be a long year folks...
