Week 6: Red Velvet Bites

Happy Valentine's Day!
You'll never guess what I put in these moist red velvet bites... Beets! The best part is watching people's reactions when they find out there's a vegetable in these delicious little treats.
Just like the peanut butter cups last week, this nifty little recipe was forwarded to me from my sister-in-law's naturopath as well... So if anyone is looking for a doctor in Toronto who specializes in dessertology, I can totally hook you up with her contact information.
I feel like I'm beeting a dead horse (how fun was that pun!) everytime I go on about how delicious a dish was. I'm running out of synonyms
for 'amazing'. I guess we can just agree that I'm pretty freaking incredible, and move on to the recipe ;).

Ingredients
     1 small beet, peeled and chopped
     1 cup walnuts (or cashews)
     1/2 cup unsweetened, shredded coconut
     1/2 tsp cinnamon
     1/4 tsp cocoa powder
     1/2 tsp vanilla extract
     3-4 medjool dates - don’t forget to pit them!!
     2-3 tbsp coconut oil
Directions
     Process every ingredient except for the coconut oil until crumbly.
     Add the coconut oil, and process until mixture becomes a dough-like consistency
     Roll the dough into bite sized-balls and place on waxed paper
     Drizzle with chocolate and coconut and enjoy!
