Week 27: Vegetarian Quesadillas + Homemade salsa

I found a fully equipped kitchen just in time for the last meatless Monday of July! I volunteered to dog/house sit for access to said kitchen… which means I’ve resorted to picking up heaps of dog poop and wipe up “accidents"* to gain access to a kitchen.
I thought I'd mix up some salsa as a snack for the finale of 'The Bachelorette', which has quickly become one of my favourite guilty pleasures. I also made my first quesadilla (without my dearly missed grill... but it was just as good on a pan) for dinner because I couldn't wait to try the salsa.
While watching Dallas Buyer's Club last week (watch it if you haven't already, it's super!), I snacked on a devastatingly vinegary salsa. It almost ruined salsas for me, which I didn't think was possible. While searching for a homemade sa
lsa recipe, I actually learned that salsas aren't supposed to contain vinegar at all. Vinegar happens to be a staple in the jarred stuff for preservation purposes. So for truly organic salsa - make your own. The salsa recipe I used is similar to the stuff at Chipotle, and incredibly easy. There were only five ingredients!
For the quesadilla, I sautéed mushrooms and spinach, and sandwiched them between tortillas laced with jalepeno cheddar cheese. It was delicious!
*Are the puddles still considered “accidents" if they’re peeing 5-6 times a day in the house?
