Week 26: "I can't believe they're homemade!" Cookies
Published by Emily,
Half the year is in the books, everyone! Hope you all had an explosive Canada Day/Fourth of July. I’ve been meaning to try this cookie recipe for too long. As soon as my gums healed enough for me to start chewing comfortably again, I ate for three hours straight. Then hopped on my bike and dropped by the grocery store to pick up ingredients for these cookies. I was worried the days of anticipation would inflate my expectations, but let me tell you… these cookies will exceed your wildest dreams. If your wildest dreams involve warm, gooey cookies. I’m having trouble describing how amazing these cookies were without drooling or unleashing profanities. So, I will just leave the recipe below and trust that you’ll try them.
I hit a couple speed bumps when rounding up the ingredients: the first was that I had inadvertently purchased an expired chocolate bar. I guess I never bothered checking the date under the assumption that the residents of Liberty Village are normal and buy enough chocolate to prevent the grocery store from assuming the unfortunate task of discarding expired chocolate. Yes, I did contemplate using the 8 month old chocolate bar… but my brother insisted that I was disgusting so I hopped back on my bicycle for an evening grocery run.
The second speed bump happened an hour later, when I discovered the baking powder had been packed and moved to our new house. I wasn’t about to make a third trip to the grocery store, so I called my aunt who thankfully had some and ran across the street to retrieve it. But it was 10pm and my aunt was too tired to wait for me to make the ascent to her fifth floor apartment. Instead, she decided to shout at me in Chinese before throwing the white powder off her balcony - Amanda Bynes style. It must’ve been a pretty comical scene, especially since the shouting drew attention to my hideous (but cherished for their comfort) fitted pyjama shorts. Those shorts are usually kept from public eye, but during my baking powder mini-crisis, my sartorial choices were placed on the back burner as I suspected few neighbours were still outside at the time. Of course, with my luck, my next-door neighbours were all outside fixing their porch lights, which were operational and shone a spotlight on my hideous shorts. My self-consciousness kicked in and I retreated to my home after picking up the baking powder as fast as I could… the situation made more awkward by my poor running form -- impaired by the fact that I had to hold up my boobs as I ran. Thankfully, by the end of my [crazy] Friday evening, I had some AMAZING cookies to show for it.
Recipe: Yields more than 2 dozen cookies. I can’t give you an exact number because I swallowed the cookies whole as I took them out of the oven.
Ingredients
Directions1/2 cup butter1/2 cup sugar1/2 cup brown sugar1 egg1/2 tsp vanilla1 cup flour1 1/4 cup blended oatmeal1/4 tsp salt1/2 tsp baking powder1/2 tsp baking soda1 cup chocolate chips3/4 cups chopped nutsHalf a Chocolate Bar (50g), grated
Cream the butter and sugars in a large bowl.
Add the eggs and vanilla and beat until smooth.
Mix in the flour, oatmeal meal, salt, baking powder and baking soda until evenly distributed.
Fold the chocolate chips, nuts and grated chocolate into the mix.
>>> If you have an abnormal fondness for the taste and grittiness of cookie dough (Hi, Chirstine!) this is the final step. Grab a spoon and enjoy! For everyone else:
Bake at 375F for 6-7 minutes. You don’t want to let them get too golden or they’ll turn crunchy (instead of chewy) when they cool. When the cookies are ready, place them on a cooling rack for about 5 minutes before devouring.
