Week 16: Whole wheat blueberry waffles!!

RECIPE (from Fantastic Eats)
Blueberry Maple Syrup (can we all just pause and take in how brilliant this is?!)
Ingredients
1 cup frozen blueberries
1/4 cup maple syrup
2 tablespoons lemon juice (you will need the zest of a whole lemon for the waffles, so zest the lemon before slicing it!)
Directions:
Combine the ingredients in a small saucepan and bring to a gentle boil.
Simmer for ~ 8 minutes until syrup has thickened.

Waffles
Ingredients
A little under 2 cups of whole wheat flour
1 tbsp ground flax seed
2 tsp baking powder
1/4 tsp salt
1 tablespoon honey (I used agave nectar because our honey crystallized and sometimes when you wake up in the morning you’re just not in the mood to wrestle honey out of a bottle)
1/4 tsp almond extract (or vanilla extract)
2 eggs, separated
1/4 cup canola oil
1 1/3 cup vanilla almond milk
Zest of 1 lemon
2 tbsp lemon juice
1/2 cup frozen blueberries
Cooking Spray (or a little bit of oil and a brush)

Directions
Mix the dry ingredients (flour, flax seed, baking powder, salt) together.
Whisk the wet ingredients (honey, vanilla extract, egg yolks, oil, lemon juice and lemon zest) well.
Combine the wet and dry ingredients and whisk until evenly combined.
Beat the egg whites until stiff peaks form. Once done, preheat your waffle iron.
Fold the egg whites and frozen blueberries into the waffle batter. Do not over mix.
Spray the iron with cooking spray before scooping a generous amount of batter onto the centre of the waffle iron plate. Cook the waffles until the steam subsides.
Top with blueberry maple syrup… and possibly ice cream if you’re having this as a dessert/shameless breakfast? ;)

These waffles were a brilliant way to start off the morning! I loved the light hint of lemon. I also loved not having to go to the grocery store to pick up any ingredients this week! Sorry for the short post; I had a wawfully hard time thinking of jokes about waffles and have my final final of undergrad to study for!
