45: Chickpea Salad Sandwiches

Happy new year everyone! I caught the flu and spent pretty much all of yesterday sleeping. It looks like I did not make it to 52 dishes in 2014 but I had so much fun learning new dishes and culinary tricks that I've decided to keep the same resolution this year. I might switch blogging platforms though - I'll post my new address once I figure out which platform to use! Til then, here's a picture of the delicious chickpea salad sandwiches I made. I'm so impressed with the oh she glows cookbook so far.

Recipe
Ingredients
2 stalks celery, finely chopped
3 green onions, thinly sliced
1/4 cup finely chopped dill pickle
1/4 cup finely chopped red pepper
1 can chickpeas, rinsed and drained.
2 to 3 tablespoons veganaise or organic mayonnaise
1 clove garlic, minced
1 1/2 tsp yellow mustard
2 tsp minsed fresh dill (optional)
1 1/2 to 3 tsp fresh lemon juice
1/4 tsp fine grain sea salt
freshly ground black pepper
toasted bread or crackers to serveDirections
Mash the chickpeas with a potato masher until flaky in texture
Stir in celery, green onions, pickles, peppers, mayonnaise and garlic until evenly combined.
Stir in mustard and dill and season with lemon juice, salt and black pepper. Adjust to taste.
Serve on toasted bread, crackers, or tortilla and enjoy!
