40: Belgian Waffles!

These waffles were so good I’m kind of at a loss for words right now. They blew week 16’s whole wheat blueberry waffles out of the water. I just want to invite everyone over right now (don’t even care that it's 1am) and make them try these. It is probably one of the best desserts to whip together if you’re looking for a simple, but impressive crowd-pleaser. Or, if you’re having a particularly bad day, I can’t think of anything better than indulging in a batch of this heavenly treat — with extra ice cream of course. On the topic of ice cream, you have to try President’s Choice’s Pralines and Cream ice cream. It’s extra creamy, loaded with pralines, and just $3 a tub.

2 egg yolks
1 tsp vanilla extract
1/4 cup butter, melted
1 cup milk
1 cup flour
1 tbsp sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
2 egg whites
pinch cinnamon (optional)
chopped pecans to top
Preheat the waffle iron and lightly grease it by brushing on butter or oil.
Whisk the wet ingredients together until evenly incorporated
Add the dry ingredients and mix everything together well.
Beat the egg whites until stiff peaks form
Fold the egg whites into the batter. You may add a sprinkle of cinnamon to the batter if you please.
Scoop some batter onto the centre of the waffle iron and cook according to your waffle iron’s cooking instructions.
Top with a generous scoop of ice cream and drizzle with chocolate. You may also add nuts, fruits, or a sprinkle of icing sugar if you wish — get creative, you just can’t go wrong with dessert waffles!
